We’re obviously sworn to secrecy about the names and exact coordinates of their vineyards, but they occupy premium locations along the valley floor and were strategically acquired for their microclimates that ensure this Bordelaise varietal receives ample heat while still enjoying just the right amount of cooling effects crucial for locking in acidity.
Our source intentionally harvested their grapes just a touch early, then vinified each lot separately to ensure complete control over the final blend. After pressing, fermentation in 100% stainless steel tanks preserved the freshness of the fruit. A portion of the lots were stirred on their lees to create a nice soft texture, then folded back into the unadulterated juice just before bottling.
Grapefruit, apple blossom, slate, and pears greet you on the nose. On the palate, tropical tones coalesce with herbs, saline, and wet stones amidst perfect acidity, showcasing exceptional palate weight and distribution. The finish is clean, with additional notes of saline, pear, and slate reverberating with a mineral-driven apple blossom umami that demands another sip – you’ll be startled how quickly you find the glass empty.
