Methodé Champenoise from a small estate vineyard in Yountville specifically dedicated to this project. The wine has spent the last 8-years on the lees and is absolutely spectacular. It will age another 20-years in your cellar to boot.
Bestowed with a 94-POINT score from a major critic, California sparkling wine doesn't get any better than this folks. It was just disgorged and labels are scheduled to go on 11/29 for shipment the following week.

Wild salmon pink in the glass with tiny, persistent
perlage. The bouquet is fresh and perfumed, packed with strawberry cream, toasted brioche, lavendar and mineral with nuances of nectarine and ruby red grapefruit. With air, red cherry, pretty passion and kiwi notes join the fracas. What a gorgeous bouquet. Tingling on entry (Dom Perignon's "stars"), but smooth and creamy across the palate (thanks to the extended lees ageing), with cherry and raspberry fruit beautifully suspended by crystalline minerality through a long, persistent finish. due to the extended Production note: sur lees ageing, the producer ages in "working glass" until the secondary fermentation is completed. The wine would then be transferred to a pressurized tank, filtered, and re-bottled in market appropriate (read: sexier) glass in a process called "transvasage". However, due to the current market for glass, we will keep the product in its working glass therefore maintaining its true Methodé Champenoise.
