After a surge of ripening in July, the grapes locked in acidity during a mild August and September, allowing our source to harvest at peak ripeness. Biodynamic practices are used in the vineyard and a minimalist approach is taken in the cellar, where they sort by hand before gently pressing the clusters. Fermented in temperature-controlled stainless steel, a long, cool fermentation preserves the varietal’s purity and showcases the local terroir.
