Presenting a pale straw hue in the glass, it opens with an expressive nose of expertly delineated gooseberries and kaffir lime floating atop white peach, apple blossom, and chervil. The palate is as elegant as they come – dry and crystalline, revealing citrus, saline, and herbs. A clean, invigorating finish expresses delicate notes of white florals, buttered bread, and green apple skins, leaving a lingering impression of understated umami.
