Presenting a pale straw hue in the glass, it opens with an expressive nose of expertly delineated gooseberries and kaffir lime floating atop white peach, apple blossom, and chervil. The palate is as elegant as they come – dry and crystalline, revealing citrus, saline, and herbs. "I don't have a refined wine palate. I tend to rate wines by how much I enjoy them. 507 was one of 4 Sauvignon Blancs I ordered. It was my least favorite but it was drinkable. My favorite was 463 Sonoma County. I thought it had nice length, smooth and not overly acidic. 507 didn't match it for me."
